Last week, Tourism Australia held a bespoke media workshop at the kitchen of Condé Nast Publishing house in the heart of Milan featuring Jo Barrett, one of Australia’s top pastry chefs and co-head chef at Oakridge in the Yarra Valley.

Jo spoke about her cooking philosophy, as well as the connection between land and produce and preparing meals in a sustainable way.

The 20 Italian media representatives learnt about the vast range of native Australian ingredients and the integration into contemporary Australian cuisine.
